ORGAVE - Made from the desert Blue Agave plant, which is also used in making tequila. The filtered juice is concentrated into a syrup similar in consistency to honey. The light Orgave has been demineralized and has a neutral flavor. Raw Orgave is more full-flavored. It is 42% sweeter than sucrose but fewer calories and has a very low glycemic index so that it is absorbed slowly by the body. Use it in beverages, baked products, cereals, fruit concentrates, condiments, desserts, candies, smoothies, fruit spreads, yogurts, granola bars, soft cookies, teas. When baking replace 1 cup sugar with 3/4 cup agave. Reduce recipe liquids 1/3 and oven temperature 25 degrees.
Although Blue Agave has a history of being used as a sweet drink by the ancient Mexican Indians, it wasn't until the mid-1990s that its nectar was experimented with and developed into a commercially manufactured sweetener. Blue Agave sweetener is liquid, similar to honey but less viscous, and its taste is very mild, slightly caramel-like, with a delicate floral aroma. It's much sweeter than refined sugar, so when cooking, use 3/4 cup for every cup of sugar called for in a recipe. Blue Agave sweeteners are low on the glycemic index (ranging from 19 to 39) due to their high fructose-to-glucose ratio, which means they do not cause insulin levels to spike and crash. So diabetics and people with hypoglycemia can use Orgave nectar in moderation as a great substitute for sugar or artificial sweeteners in their diets.
